The food chemicals in a typical Indian processed pantry include: preservatives (sodium benzoate, potassium sorbate in packaged foods), artificial colours (tartrazine, sunset yellow, carmoisine in snacks, drinks, and some spices), anti-caking agents (silicon dioxide, sodium aluminosilicate in salt and powdered spices), chemical solvents (hexane in refined oils, though this is largely removed before the product reaches you), sulphur compounds (sulphur dioxide in dried fruits, jaggery, and some spice mixes), bleaching agents (used in refined flour, some sugars), and artificial flavours (in packaged snacks, instant foods, flavoured beverages).
Individually and at low doses, most of these are considered safe by food regulatory standards. The concern is cumulative: the average Indian family consuming a typical combination of refined oil, packaged spices, processed snacks, instant foods, and flavoured beverages is exposed to dozens of these compounds daily, at every meal, for decades. The cumulative long-term effect of that exposure is an area of active research, and the precautionary approach — minimising unnecessary chemical exposure where easy alternatives exist — is increasingly well-supported.
The 5 Most Impactful Swaps for Indian Kitchens
Swap 1 — Cooking oil: replace refined oil with cold pressed oil. This is the single highest-impact change because cooking oil is used multiple times daily in Indian cooking, and refining involves the most chemical processing of any pantry staple. Impact: immediate reduction in solvent trace exposure, significantly higher Vitamin E and antioxidant intake, removal of trans fat precursors.
Swap 2 — Sweetener: replace refined white sugar with sulphur-free jaggery or palm jaggery. Impact: elimination of sulphur treatment and bleaching chemicals from your sweetener, addition of iron, magnesium, and potassium, shift to a less chemically processed product.

What Chemical-Free Cooking is Not
It is not perfection: the goal is meaningful reduction in unnecessary chemical exposure, not zero exposure. Foods cooked in cold pressed oil and sweetened with jaggery are still consumed in a world where the air, water, and many other foods contain chemical compounds. The marginal improvement from going from ‘pretty good’ to ‘perfect’ is far smaller than the improvement from going from ‘standard’ to ‘pretty good’. It is not expensive if done thoughtfully: the cost difference between refined oil and cold pressed oil is real but modest per meal. A litre of cold pressed oil costs Rs. 50-150 more than refined oil. At typical household consumption of 1-1.5 litres per month, that is Rs. 50-150 per month for a family — less than a single meal at a restaurant.
It is not depriving: chemical-free ingredients often taste better than their processed equivalents. Kachi ghani mustard oil tastes more of mustard. Jaggery chai has more depth. Himalayan pink salt has a more complex flavour. The food does not suffer — it benefits.
